Fish: Fat within fish is always
healthy. Embrace it!
Olive Oil: The only oil
you can get from a store that is not tainted is extra virgin
olive oil. This oil does not have any essential fatty acids,
though it is still a healthy form of fat relative to most all
others.
Flaxseed Oil and Canola Oil:
These are best when bought from "Flora", which is the
best at making fresh and healthy oils. The catch is that you must
refrigerate these oils, especially the flaxseed oil. Typical
intake is 1 to 2 tablespoons a day for optimal health (as these

Peanut Butter: Any brand
of "natural" peanut butter is good. It is sold as
natural, but a more correct word for it is
"unprocessed". Unprocessed peanut butter does not go
through hydrogenation, which creates lots of unhealthy trans
fatty acids, which are believed to be worse than saturated fats.
Even the government (which is the last on the information totem
pole) knows this, as trans fatty acids are illegal in baby foods.
The result of not processing is that the
oil rises to the top. When you buy unprocessed peanut butter, mix
it, and then refrigerate it to prevent the oil from rising to the
top.
Nuts: Any form of nut will
do, so choose the one which tastes the best to you.
